Whole30-Paleo Chimichurri Wings


I’ve completed Whole30 for 30 days and I can attest that my body went through positive changes. I lost 1 1/2 inch from my waist line and my hips and 1/2 inch from my arms! I also fit in a smaller dress. I am excited to see the positive changes in my body and the way I feel. Now my husband and I are going to start Whole30 together. Today will be our day 1. I thought that I would start it off with one of my favorite recipes from last month.

  • 2 pounds Chicken Wings
  • 1 bunch Parsley or Cilantro (I did half and half)
  • 1 tablespoon Red Wine Vinegar
  • 1 teaspoon Apple Cider Vinegar
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon minced Garlic Cloves
  • 1/4 cup Olive Oil

Step 1: Pre-heat the oven to 375 degrees Fahrenheit.

Step 2: Combine the parsley, garlic, red wine vinegar, apple cider vinegar , salt and pepper in a food processor, until the herbs are completely chopped. Add the olive oil until it is well blended. Put aside 1/4 cup of the sauce and refrigerate it for later.

Step 3: Pour the remaining chimichurri over the chicken and toss until it is well covered.


Step 4: I would put the wings on a baking sheet that has a rack to keep it crunchy. I mistakenly did not do it and they could have been more crispy.


Step 5: Bake for 45 minutes for wings or until golden.


Step 6: Spoon the remaining 1/4 cup chimichurri sauce over the wings.


Step 7: Garnish with ranch sauce. Eat and Enjoy!
