Whole30 Day 4 Dinner
I love this recipe because it is super quick to assemble. Roughly chop vegetables, drizzle olive oil and seasonings, top with chicken, bake and BAM! DONE!!! Chicken thighs are relatively cheap part of the chicken and has a decent amount of meat to it. Day 4 and I am feeling my body getting cleansed. I started getting a headache but I realized I needed food immediately. Staying well fed throughout the day is sooo important. Pack extra snacks wherever you go so you are not tempted to eat junk.
- 1-2 lbs Chicken Thighs
- Olive Oil
- 2-3 Carrots, roughly chopped
- 1-2 Sweet Potatoes, roughly chopped
- 1 Onion, roughly chopped
- 2 Garlic Cloves, chopped
- 1 tablespoon Thyme
- 1/2 tablespoon Rosemary
- Sea Salt and Pepper to taste
Step 1: Pre-heat oven to 375 F.
Step 2: Roughly chop carrots, sweet potatoes, garlic and onion and place in a deep pan.
Step 3: Drizzle olive oil and sprinkle salt and pepper over vegetables. Toss to evenly coat.
Step 4: Season each chicken thigh with a small dash of olive oil, salt, pepper, thyme and rosemary. Place on top of the vegetables.
Step 5: Cook for about one hour or until golden brown.
Step 6: Eat and Enjoy!
