Whole30 Day 2.
I’ve had this for lunch yesterday and today and it is surprisingly filling. I really really love chicken salad sandwiches, especially on a delicious croissant. I was afraid I was going to not be satisfied without the bread but… I was. Weird.
- 1-2 Chicken Breasts, baked and chopped
- 2-4 Avocados
- 1/3 cup chopped Grape Tomatoes
- 2-3 strips cooked Bacon, chopped
- 4 Green Onions, chopped
- 1/4 cup Paleo Mayo
- Salt and Pepper to taste
Step 1: Scoop out some of the avocado.
Step 2: Combine the remaining ingredients.
Step 3: Scoop mixture into avocados.
Step 4: Eat and Enjoy!
