I needed a breakfast pick-me-up. I was getting bored with eating the same few things every morning. It was getting to the point where I didn’t want to eat anything in the morning, which would put me in a less than positive attitude for the rest of the day. Having something yummy and different made today go a lot smoother. Thank you to my friend Barbara who recently shared this recipe with me.
- 3 oz Extra-firm Tofu
- 1/4 cup diced Red Onion
- 1/4 cup diced Bell Pepper
- 1/4 teaspoon Granulated Garlic
- 1/4 teaspoon Chili Powder
- 1/4 teaspoon Nutritional Yeast
- 1/4 teaspoon Turmeric Powder
- Salt and Pepper to taste
- 2 tablespoons Olive Oil, separated into two parts
- Optional: Sriracha
Step 1: Take the tofu and wrap in a clean towel. Put your heaviest pot on top of the wrapped tofu for 15 minutes.
Step 2: Dice the onion and bell pepper.
Step 3: Heat your pan over medium heat. Add a tablespoon of olive oil, the onions and bell pepper. Cook until translucent. I wasn’t paying attention and mine went a little crispy, but I like it that way sometimes.
Step 4: Move the veggies to the edges of the pan. Remove the tofu from the towel and crumble it into the middle of the pan.
Step 5: Add the seasonings and a tablespoon of olive oil to the tofu and mix to combine.
Step 6: Garnishing with sriracha is optional. Eat and Enjoy!
