A vanilla pudding pie with a layer of sliced bananas. This is such a light, delectable pie that I have made it twice and it has been a hit both times! Its really easy and not something you see very often at the dessert table for family gatherings.

- 1 Pie Shell of you choosing
- 1 1/2 teaspoons Unflavored Gelatin
- 3 tablespoons boiling Water
- 1/3 cup, plus 1/2 teaspoon Sugar
- 3 tablespoons All-Purpose Flour
- 2 egg yolks
- 1 1/2 cups Milk or Almond Milk
- 1 teaspoon Vanilla Extract
- 2 cups sliced Bananas (3 medium bananas)
- 1/4 cup Whipping Cream
- 1/2 teaspoon Sugar
*Note: If you don’t feel like making the whipped cream, just buy Cool Whip and spread an even layer over the pudding 🙂
Step 1: Preheat the oven to 350 degrees Fahrenheit.
Step 2: Bake pie shell according to directions.
Step 3: In a small bowl, add the gelatin and 3 tablespoons of boiling water and stir until gelatin is dissolved.
Step 4: In a medium saucepan, whisk together 1/3 cup of sugar, flour, milk and eggs together. Whisk until the flour and sugar dissolve.
Step 5: Cook over a medium heat, stirring constantly, for 10 minutes, until mixture comes to a boil and has thickened. Stir in the vanilla extract and gelatin. Set aside to cool slightly.
Step 6: Arrange the sliced bananas on the pie crust.
Step 7: Pour the pudding on top. Place in the refrigerator until the pudding has set, about 3 hours.
Step 8: Whip the cream with an electric beater. When it is about halfway done, add 1/2 teaspoon of sugar, then continue whipping until fully whipped.
Step 9: Put the whipped cream in a plastic bag, concentrating it in 1 corner of the bag. Snip that corner off the bag and squeeze the whipped cream out of the bag in a decorative pattern around the pie.
Step 10: Decorate with Nilla Wafers or crushed graham crackers. Eat and Enjoy!
