During the summer, my sweet cousin Ciara visited. We took this tween raised in the city and introduced her to some nature. My husband and I took her to feed retired horses carrots, tubing down the Itchnatuckee River and saw a flooded sinkhole. Not only did we go on nature adventures, we also went out on a limb for our tongues as well. Sweet potatoes is a popular Southern vegetable. My husband and I wanted to expose Ciara to some southern food but in a fashion she would like. What better way to get a picky kid to try out a new veggie but to add bacon to it. Bacon = Glorious Victory!
- 3 large Sweet Potatoes, peeled and sliced 3/4 inch
- 1/4 cup Pecans, chopped
- 2 tablespoons Canola Oil
- 1 tablespoon Mesquite Seasoning or Chili Powder
- 1/2 cup crumbled Bleu Cheese
- 1/4 cup cooked Bacon pieces
- Optional: Honey for drizzling
Step 1: Pre-heat the oven to 350 degrees Fahrenheit.
Step 2: Combine potatoes, oil and seasoning until evenly coated.
Step 3: Place potatoes on a baking sheets. Bake 30-40 minutes or until tender and golden.
Step 4: Plate sweet potatoes. Top with blue cheese, pecans and bacon. Drizzle with honey if you desire.
