Red Velvet Shortbread Cookie

I am officially off for the winter break and I couldn’t wait to get to my parent’s house and start making Christmas cookies with my Mommy. About 3-4 years ago, we started a tradition of making hundreds of various cookies as gifts. Since this is a recent tradition in the making, we are still experimenting with cookie recipes. Eventually we will be able to have the perfect assortment in each box for our loved ones. These are the perfect combination of red velvet cake and a holiday cookie. They were really cute to make and are a nice addition of our gift boxes.

Yields: About 15 cookies

Ingredients for Cookies:Red Velvet Shortbread Cookies

  • 1 1/4 cup All-Purpose Flour
  • 1/3 Sugar
  • 2 tablespoons Unsweetened Cocoa Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Butter, cut up
  • 1 tablespoon Red Food Coloring

Ingredients for Decoration:

  • 3 ounces White Baking Chocolate with Cocoa Butter, coarsely chopped
  • 1 1/2 teaspoons Shortening

Step 1: Pre-heat oven to 325 degrees.

Step 2: In a food processor, combine flour, sugar, cocoa powder and salt. Pulse in short bursts until well-mixed. You may have to use a spatula to scrap the sides of the processor.

Step 3: Add butter and red food coloring. Pulse in short bursts until well-mixed. You may have to use a spatula to scrap the sides of the processor.

Step 4: Transfer to a cold surface and knead until the dough becomes shiny. Form into a ball.

*Note: I wore gloves because the red food coloring would have slightly stain my hands.

Step 5: On a slightly floored surface, roll dough until 1/2 thick.

Step 6: Using a 1 1/2-inch scalloped round cookie cutter (or another shape of your choosing), cut out dough. For excess dough, re-roll into a ball and repeat process.

*If dough becomes too sticky, roll into a ball and put it into the fridge to cool it off again. The butter in the dough probably was getting too hot from your hands and air.

Step 7: Place cutouts on a parchment covered cookie pan.

Step 8: Bake 20-25 minutes, or until centers are set. Transfer to a wire cooling rack until cool.

Step 9: In a microwave safe bowl, combine white chocolate and shortening. Microwave for 15 seconds at a time and mix until melted and smooth.

Step 10: Drizzle cookies with white chocolate in any design you want. Let stand until white chocolate is set.
