How to Oven-Roast Chickpeas

Roasted chickpeas are all the rage on Pinterest, especially if you are into pinning healthy snacks. I was really interested, as was some of this blog’s viewers. I have to admit, I was a bit skeptical that these would come out tasting yummy. I imagined an ashy-burnt taste. But I am happy to say, with the right combination of seasoning, I was enjoying them a lot. They smelled like home-popped popcorn and tasted similar to roasted nuts.

I noticed mine do not have that pretty golden orange color that those pictures on Pinterest have. I am not sure why, but mine were more yellow-brown. Whatever! This a great way to eat a healthy snack or even put on top of a salad for some crunch. The original recipe comes from http://www.caramelpotatoes.com/2012/05/10/crunchy-roasted-chickpeas/. Hope you experiment and have fun!

Ingredients:

  • 1 can of Chickpeas
  • 1 1/2 tablespoons Extra Virgin Olive Oil
  • Coarse Salt
  • 3/4 teaspoons of your choice of seasoning (Smoked paprika, cinnamon-sugar, garlic, ETC)

Step 1:Pre-heat oven to 400 degrees.

Step 2: Drain and rinse the chickpeas.

Step 3: Let the chickpeas dry on a paper towel for 15 minutes.

Step 4: Pour the olive oil over chickpeas in a small bowl and mix to coal well.

Step 5: Place chickpeas on a baking sheet covered in parchment paper.

Step 6: Bake for 35-45 minutes, mixing them occasionally.

IMG_3599 Step 7: Season with salt and whatever other seasoning you like.

Step 8: Eat and Enjoy!
