Fancy Pumpernickel Gouda Sandwich

Today is one of those days that I feel like being adventurous. Not climbing a mountain adventurous. That would require exercise and therefore sweat, which I do not enjoy. Also I am completely burnt from the beach because I unknowingly used expired sunblock. Now I look as red as my tomatoes in my garden.

This will be a day to experiment with my taste buds. This compelling feeling can either become a memorable creation or a disastrous collision of ill-fitted flavors.

We will see…

Ingredients:

  • 1 Pumpernickel Bagel or 2 slices of Pumpernickel Bread, toasted
  • 2 slices Smoked Gouda
  • 1 tablespoon of Butter
  • 2 slices of cooked Bacon
  • 1/4 cup chopped Spinach

* Vegetarian Option: Instead of bacon, you can add roasted eggplant or sliced mushrooms.

Step 1: Butter toasted pumpernickel.

Step 2: Place cheese on toasted pumpernickel and place under a broiler for less than a minute. Time depends on your oven. (I messed up slicing the cheese so it came out chunks of slice cheese. Still works.) Cheese will not be melty like mozzarella but will get a nice golden look to it.

Step 3: Arrange bacon and spinach on the bread.

Step 4: Eat and Enjoy!

And it was a success. This was a friggin’ good tasting sandwich. And the possibilities are endless. Go experiment with some sandwiches!
