Tater Tot Breakfast Casserole

So the Stuffing Brunch Casserole lasted my fiancé and I for four days. Time to try a new type of casserole that I have saved on my Pinterest (and yes for those of you who know me, I admit I am very obsessed with Pinterest). This recipe comes from http://www.grouprecipes.com/35380/tater-tot-casserole.html. I added mushrooms to the recipe because they were starting to go bad in my fridge and I needed to use them today 🙂
This recipe reminds me of my best friend Hailey. In college, most kids have some type of staple that gets them going through the years, even if it necessarily wasn’t good for you. Mine was pasta with a bit of butter and garlic. I’ve known plenty of guys surviving contently on hotdogs, and mac and cheese. For Hailey, it was tater tots. She could have it breakfast, lunch or dinner. If not for the bacon (she is vegetarian), she would love this recipe.
Note for Vegetarians: There is a thing I have been researching to replace bacon. I love bacon but I do have friends who have the no-meat mentality. Vegetarian blogs mention “Liquid Smoke,” which can be found near the BBQ sauce aisle. Put a few drops in any recipe and it gives the food a hickory bacon flavor. For this specific recipe, I would add it with the milk. Hope this helps 🙂
  • 1 pound Bacon or Sausage (or why not both!), cubed…I would pre-cook it
  • 2-4 cups shredded Cheddar or Mozzarella cheese
  • 2 cups Milk (I used Almond Milk)
  • 4 Eggs
  • 2 pounds Frozen Tater Tots
  • 1/2 package of Mushrooms, chopped (optional)
  • 4 slices of America Cheese, cubed (optional)
  • Salt and Pepper to taste (I forgot to put them in the picture, sorry guys)

Step 1: Pre-heat oven to 350 degrees.

Step 2: Spread the bacon evenly in the bottom of a 9×13 inch pan.

*Note: I would pre-cook the bacon to get it a bit crunchy before putting into the casserole dish. The bacon will cook either way, but I feel the texture would be better if pre-cooked. The original recipe does not specify this and I did not pre-cook it. It still tasted fine and was safe to eat, but the bacon was soft.

Step 3: (Optional) Spread the mushrooms evenly over the bacon.

Step 4: Spread cheese over meat.

Step 5: In large bowl, beat together milk and eggs. Pour over cheese. (May be refrigerated overnight at this point).

Step 6: Top with frozen tater tots.

Step 7: Bake in oven for 30-45 minutes.

Step 8: Cool for 5 to 10 minutes before serving. This cooling process is really important. The tops of the tots will be brown but you will notice some watery-jiggling going on. The cooling will allow the eggs and cheese to solidify and make serving easier.

Step 9: Eat and Enjoy!
