My fiancé and I are attempting to make our daily diets more green, as in eating healthy. I mean I guess we already do eat pretty well compared to some people. However, I have two years to fit in an awesome wedding dress and Ben has four months to finish training for this insane 11 1/2 mile obstacle course. Men have such an easy time losing weight.
I could be a bulimic (which I am NOT; because obviously I love food too much) for a year and still lose less weight than a man giving up beer for two weeks. The ridiculousness of it all is mind-boggling and quite infuriating. So to start my quest of the ideal wedding body, I need to add more colorful veggies to my diet, along with dreaded exercising and stupid sweating. Let’s just say I am more enthusiastic about trying out new recipes than hitting the gym and trying out Zumba.
The first recipe on the list of healthy and hopefully yummy recipes is from http://prouditaliancook.blogspot.ca/2010/05/tiny-tomatoes-big-taste.html- “The Zucchini Boat.”
- 2 Zucchini
- 3 tablespoons Olive oil, separated
- 1-2 Crushed Garlic Cloves
- Salt and Pepper to taste
- 1/2 cup shredded or cubed Mozzarella
- 1 medium Tomato diced or 2-3 sliced Grape Tomatoes
- 1/4 cup Parmesan
- 1-2 fresh Basil Leaves, shredded
- Breadcrumbs (I forgot to put the breadcrumbs in the original picture)
Step 1: Pre-heat oven to 350 degrees.
Step 2: Cut zucchini in 1/2 lengthwise.
Step 3: Scoop out the seeds with a spoon. Place zucchini halves in a baking dish.
*If it doesn’t fit, cut off the ends.
Step 4: Mix together 2 tablespoons olive oil, crushed garlic, salt and pepper in a tiny bowl. Brush the oil mix over the zucchini halves.
Step 5: Arrange the tomato pieces on the zucchini groove.
Step 6: Sprinkle breadcrumb over zucchini.
Step 7: Bake for 30 minutes.
Step 8: Remove from oven, sprinkle mozzarella and broil until cheese is melted or golden (Usually this takes only a few seconds).
Step 9: Remove from oven again. Drizzle remaining olive oil, parmesan and shredded basil.
Step 10: Eat and Enjoy!
