Mom’s Favorite Chocolate Chip Banana Nut Bread (courtesy of Mrs. Fields)

My mom has a dozen recipe books but she always turns to “Mrs. Fields I Love Chocolate Cookbook.” She has had this book as long as I can remember (the book was made in 1994 and I was born in 1989). You can do this recipe several ways: with nuts, with chocolate, with nuts and chocolate, or none. It all depends on your current craving but as long as you have the basic batter down you can add whatever you want.

Also, I have to thank my mom for all the pictures. She did this while I was sleeping. I came home for the holidays, burnt out from a hard semester, and then my sister gets me sick with some weird combination of a cold and sinus infection. Thanks Becka!

Yields: Two 9-inch Loaves


  • 3 cups All-Purpose Flor
  • 2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 1 1/2 sticks (3/4 cup) Unsalted Butter, softened (but sometimes we use Country Crock anyway)
  • 3 cups Mashed Bananas (about 8 medium bananas)
  • 4 Large Eggs, well beaten
  • 2 cups Sugar
  • 2 teaspoons Vanilla Extract
  • 2 cups diced Walnuts (optional)
  • 1 cup Mini Semi-sweet Chocolate Chips (optional)

Step 1: Pre-heat oven to 350.

Step 2: Using a butter spray, hold up the pans and spray the entire pan. Add a piece of parchment paper. Spray the top of the parchment paper.

*An easy way to get the perfect cut of parchment paper is to lay the pan down on the paper, trace the bottom edges with a pencil, and then cut.

**To get the most out of the butter spray, always keep the can vertical. If you hold the can horizontal and spray, air will escape into the can and waste the contents.

Step 3: In a large bowl, whisk together the flour, baking soda, sugar and salt.

Step 4: Add butter to the dry ingredients and beat.

Step 5: Mash the bananas.

Step 6: Add the vanilla and eggs to small bowl. Beat until well blended.

Step 7: Add the egg mixture to the flour mixture and blend well.

Step 8: Add the mashed banana to the bowl and blend.

 Step 9: Here is where you can add the nuts, chocolate or both.

Step 10: Fill each buttered pan half way.

Step 11: Bake for 50-60 minutes, or until golden brown.  (Mom made two different types: one with nuts, and one with nuts and chocolate chips)

Step 12: Remove from oven, set pans on a cooling rack and wait to cool for 15 minutes.

Step 13: Take out the breads and remove the paper.

Step 14: Eat and Enjoy!
