Chocolate Oatmeal Coconut Cookies


This weekend my friend Barbara and I had a girl’s day. This included three types of facials, manicure and pedicure, lots of girl talk, and of course we needed chocolate. We decided to make a recipe of Barbara for oatmeal cookies. To make it extra yummy we added chocolate chips and coconut, a combination to make me drool any day. Once we finished baking them, we had to stop our manicure just to eat these cookies because they were that good. We stood in the kitchen, chowing down on them.



  • 1/2 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 stick of Butter or Vegan Butter, softened
  • 1 Egg or 1 tablespoon of Ground Flaxseed mixed with 3 tablespoons of Water
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Almond Milk
  • 1 cup All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 cup Rolled Oats
  • 1 cup Chocolate Chips (some chocolate chips are vegan)
  • 1/2 cup Shredded Coconut

Step 1: Pre-heat oven to 350 degrees.

Step 2: Combine brown sugar and granulated sugar.

Step 3: Cream with softened butter.

*Note: Barbara prefers to do this with a fork but you are more than welcome to use a hand-held blender.

Step 4: Mix the egg (or flax seed mixture), vanilla, and milk. Add it to the sugar and mix.

Step 5: In a separate bowl, sift flour, baking soda, baking powder, and salt.

*Note: We used a hand sifter, but a colander works too. The purpose of these tools allows the dry ingredients to be of a softer and finer quality.

Step 6: Pour dry ingredients into wet bowl and mix thoroughly.

Step 7: When the mixture is smooth, add oats, mixing well.

Step 8: Stir in chocolate chips and coconut.

Step 9: Drop cookies using a large spoon on a well-sprayed cookie pan

Step 10: Bake until lightly browned (around ten minutes).


Step 11: Eat and Enjoy!
